Moroccan-Spiced Vegetable Stew


I enjoy hearing from people who appreciate the quick and easy recipes in Vegan Unplugged. Case in point, this photo of the Moroccan-Spiced Vegetable Stew that came with the following comments:

“Awesome!!! We loved this recipe from Vegan Unplugged. In addition to the cumin and cinnamon, I decided to give it a little kick by adding some crushed red pepper, very nice. And because we had no dried fruit on hand, I substituted some tropical trail mix. I rinsed the trail mix in warm water before soaking to flush out any added salt or sweeteners, and left whatever nuts made it into the final mix. Wow! We enjoyed it with some flat bread which proved to be the ideal accompaniment for this comfort dish. We decided to dub it Moroccan Happy Stew. ~L.L.”
